a rich & peppery soup laced with fiery aged sherry, shot with cream

Warm Quail Salade, perched on a bed of Belgium endive,
nestled in watercress, dripping Roquefort vinaigrette

Gravlax tower, erected with garlicky Boursin, bleeding tomato concasse


MAIN COURSE

Tournedos of beef, twin filets scourged with pancetta & beaten with
Brie, salved in a sauce of buttery merlot

Chilean sea bass, speared with asparagus, smeared with pistachios
and splashed with Chablis

Canard L'Orange, a pulsating breast, seared, sliced and kissed with a fresh
orange and leek begird
